Just a detail: War of the Roses was not an English Civil War (neither the ones in Game of Thrones, by the way). Civil Wars are wars between social groups in a country. War of the Roses was a war between dynastic lines to control the throne of England. It was not a war between people, but between contenders to the throne.
Indeed, there was a big difference between those medieval wars and modern wars: the biggest problem with medieval wars was how to prevent your own people from escaping, since they were not really committed. The inflection point between both styles happened with Napoleon, whose soldiers, french people after the French Revolution, were far more committed than classical feudal levy.
And I'm afraid George RR Martin has failed to represent this. The armies in Westeros look more like modern armies, and so the war looks more like a Civil War, which the original War of the Roses was far from being.
